This week Pieter van Zyl of The Chequers Inn gives us his recipe for pears stuffed with stilton, cream cheese and walnuts...
"Pears are coming into season now that it's late summer and here is a delicious recipe for this lovely locally-grown fruit.
"Take a tub of cream cheese, 150g of Stilton (or a milder blue cheese if you prefer, such as dolce latte). Mix them together with a squeeze of lemon, black pepper, but no salt. Mix it all with a fork in a bowl so that it's chunky, not smooth.
"Now roughly chop 50g of walnuts and add to the mixture.
"Peel and core your ripe pear and place on a bed of watercress. Fill the cored pear with your cream cheese mix. Crumble more Stilton over the pear and a handful of walnuts.
"Finish off with a drizzle of olive oil and more lemon juice.
"The sweetness of the pear, the mustiness of the blue cheese, the creaminess of the cream cheese and the sharpness of the lemon combine to make a delicious starter or light lunch dish.
"Enjoy!"
