Cooking methods have changed so much. It really was not that long ago that the only choices you had were between a gas or electric cooker. Then microwave ovens were born, using high energy radio waves to heat the food much quicker than a conventional oven. The latest innovation in the kitchen is induction cooking which is still perhaps a bit of a mystery to some people.
What is induction?
In simple terms induction is generating electricity using magnetism. When you turn on the power a magnetic field is created. It penetrates the metal pan and induces whirling currents inside the pan which in turn get hot and heats up the food or water within. An induction hob will boil a pan of water almost twice as fast as a gas hob.
Induction cooking is more energy efficient than gas because the whole surface of the hob is not being heated just the base of the pan, heat is instant and food cooks faster. Cleaning your hob in the past may have been difficult, for example if food had boiled over or burnt onto the hob. With induction this doesn’t happen as the hob doesn’t get so hot that food would burn on – it’s the pan that heats up, so spills can be wiped away easily.
