Lesley Hawkins has been teaching local people, through Community Learning courses at Grantham College Business Development Centre, everything ‘cakey’ for the last two years but her biggest cake achievement came at the weekend when she won Merit in the Cup Cake category at Cake International in Birmingham.
Lesley, who is the owner of The Delightful Cake Company and a qualified tutor, was one of approximately forty entries in Class K - Cup Cakes at this weekend’s competition. Lesley’s entry could be described as ‘Victorian Tea Room’ with a dozen cupcakes (a mixture of vanilla and chocolate) decorated with mini sandwiches, cream scones, chocolate éclairs, a cup of tea with accompanying tea pot and sugar pot.
Each entry was judged on taste, design and the mixture of techniques used with Lesley’s entry gaining a Merit – only 3 entries per class gain this achievement. Lesley, who only entered the completion three weeks ago, had a busy week running up to the competition with running her own cake business, studying part time and teaching part time alongside the usual duties of mum and wife.
Lesley shares her love of all things cakey through her courses which have consisted of Cath Kidston Inspired, Wedding Cupcakes, Characters and Choccywoccydoodah style. Whilst cupcakes seem to be the flavour of the month Lesley is already planning next year’s entries in a variety of categories.
