What is your favourite dish to create on our menu?
Definitely Red Thai curry. I was inspired by the street food on my trip to Thailand and I love the sweet, sour and bitter flavours. It is full of flavour and freshness.
Favourite thing about working at La Mare?
The place and the people make the place very special!
Why did you decide to become a chef?
It’s a family tradition. I have a lot of family that work in food and catering and I decided I wanted to be a chef around age 14 years old and was a trainee chef at the age of 15. Since then I carried on under the strict eye of good chefs and worked my way up.
What is your proudest moment?
Professionally, gaining my third rosette in September 2018 at the Park Lane Marriott Hotel in London was an amazing experience which will stay in my memory forever. Personally, my proudest moment is when my son, Oscar was born in 2015.
Where was your most memorable meal?
At The Square in London, a two Michelin star restaurant. It was a 9 course tasting menu with wine and everything was cooked to perfection. The cod with hazelnut milk stood out for me and the camomile panna cotta with textures of clementine. This inspired me in the way I cook and took me in the direction to get my third rosette.
Are there any chefs or food personalities you most admire?
Marcus Wareing, I really like his style of cooking.
What is your guilty pleasure?
A takeaway Chinese takeaway and a good glass of wine!
