Yesterday I went to Ransom Wood Estates just outside of Mansfield - took me about 20 minutes from Newark in the Mini 'pocket rocket'. The site on which Ransom Woods is based was originally a TB hospital in 1905. It was designed with fresh air and well-being in mind, to the point of making residents sleep on open verandas, even in winter.

The Ransom Woods project is multi-faceted. I was in the first instance however, meeting the entusiastic Paul Jones who is heading up Forever Green, a stunning restaurant/art cafe in the middle of the woods. The idea being you are dining with nature. The menus feature a mouthwatering array of dishes that are prepared fresh each day by the team headed up by Paul. The Forest Suite can accommodate up to 120 people and enjoys fantastic views directly into the treetops.

The project is all about focusing on the environment and the vision is to showcase a 70 acre forest park that integrates offices with high quality leisure.
