FRESH GREEN PASTA SALAD SERVED WARM

INGREDIENTS

  • Fresh pasta (chose your favourite ones, linguine, shells, penne& )
  • Fresh spinach
  • Fresh or frozen petits pois (defrost)
  • Roquefort or Stilton cheese
  • Balsamic vinegar
  • Olive oil
  • Parmesan shavings
  • Fresh Flat parsley
  • Pine nuts

Boil the fresh pasta for 4 minutes in salted water. Run cold water and leave the pasta under this stream for a few seconds. Drain in colander.

Heat a large spoon of olive oil in a deep fry pan. When hot put in the fresh pasta and toss well; add freshly ground black pepper, peas and spinach, then the Roquefort in small pieces. Stir fry for a couple of minutes then add a large spoon of balsamic vinegar.

Serve in a deep plate and sprinkle with pine nuts, fresh flat parsley and parmesan shavings.

Voila! It is a delicious dish which can be eaten either warm or cold.
