James Wronski here. Welcome to my second summer recipe blog. Again, the ingredients for this recipe are currently at their very best and combined are superb!
A perfect accompaniment for your Bar-B-Qs or easily as nice as a dip for your tortillas whilst watching the footy!
Mango and spring onion salsa
Ingredients:
Method:
Skin and dice the mango into small cubes
Finely chop spring onion, red onion, chillies and red pepper and mix all together with the diced mango
Chop then add the parsley and coriander
Add the olive oil and balsamic vinegar and pinch of salt and pepper.
Finish with a squeeze of lime
This salsa goes really well with chicken, all types of seafood and would be great addition to any barbeque
For a healthy light lunch why not try grilling some salmon with olive oil, new potatoes and this salsa. Delicious.
Chef tips:
Make the salsa the day before so that all the ingredients start to work together and the flavour is at its best.
To test a mango for ripeness, press the ends firmly - if they yield slightly to the pressure, they should be ready to eat. Otherwise, if it's not quite ready, mangos can be left to ripen in a sunny spot.
